When it comes to the supporting evidence of our relationship - can I make copies?

I'll be sending the actual pictures of everything BUT can I make copies of things like ticket stubs, cards that we sent to each other and letters to each other? Or does it need to be the hard copy?

And marriage license, passport, etc - can those things just be copied at like, say the library? Or does it need to be some sort of other copy - color/b&w or does it not matter as long as it's clear?
Copies are fine -- and actually, most people will advise that you never send the originals anyway. Visa offices almost NEVER return anything you send them, so if you send the originals... that's it, they're as good as gone.

In general, follow the region specific guide and checklist. Almost everything can be just photocopies; the guide/checklist will specify if anything needs to be original or certified. This goes for things like your marriage certificate, passport, etc. as well.

And as far as I know, it doesn't matter whether the copies are black-and-white or color, as long as they are clear. I assume the guide would specify if it did.
I just photocopied everything in black and white, plane tickets, cards, phone bills, emails.
I sent in real colour pictures tho.
I got lucky and got everything back but almost everyone loose their stuff. So make sure if your send real pictures to have copies of them.
We made photo copies of all send orig mariage cert.
Ok - so copies are sufficient.

Also, how did you organize?

I know no binder, staples, etc. But how about paperclips and those bigger black binder clips? I just hate not being organized.

And did you send it in in a big envelope? Or a package?
Paperclips and bulldog clips are fine.
