Does anyone know if it's possible to find out if an application to extend one's stay has even been received? My BC health insurance will run out when my temporary permit expires in Dec. I know it takes ages for an extension to be approved, but how do I prove that I have applied for an extension? I sent in my application in late Oct. and have heard nothing.

Did you track the mailing and get delivery confirmation? That's what we always advise people to do because CIC will never confirm receipt of anything - so delivery confirmation becomes your "proof" of implied status.
It's currently taking them 116 days (they're processing requests received July 19th) to process extension aps.
Gulp! Guess I'll re-apply with a photocopy of my payment receipt. I had pregnant mommy brain at the time and simply used Canada Post. What a ditz.
You can still use Canada Post, and get tracking and delivery confirmation. Send it either Priority or Xpresspost. That's all we did.
