Question 15

We had a small wedding, 5 in all including us plus the Pastor who performed it. We got married small to avoid the stress and expense of a big ceremony and so we could start this Outland App. Neither parents attended. Only my wife's son and her best friend, and her son's best friend (who was there to take pictures). Both our families knew about the relationship and our engangement.
We are planning to renew our vows at a destination wedding location, where they will all be invited. But we will probably buy a house first. Buying a house may take up to a year or more.

This sound like a good answer, as it is the truth. Or should I leave some stuff out? Please, we are so close to finishing this, but I am slowly losing my mind and need to get this done.

Our wedding was very small, too, with only us, the wedding officiant, my dad, my oldest son & his girlfriend, my daughter, and my best friend. It took place in our apartment, and we only had a few photos.

It doesn't matter whether it was big or small, or why you chose to do it as you did, just give the facts. :)
Documenting the legality of the marriage establishes the existence of a "qualified relationship." A small civil wedding accomplishes that.

Beyond that, then, the question is the genuineness of that relationship. I suspect you have plenty of information and evidence to show how you met, how the relationship developed after you met, how it evolved to where you married, and how you have maintained the relationship since marriage, so you undoubtedly have plenty of evidence of its genuineness. No need to worry. Just be careful and thorough in filling out the forms, submitting the requisite documentation (from marriage certificate to police certificates, copies of passport and so on), and explain who you are and how and why you are a couple, and there should be no problem.
Yes, it is genuine. And yes we have a lot of IM's, phone bills, travelocity itineraries, pictures, clearances, meds etc.

That's what you need, then, to submit with the application. As dpenabill said, your legal marriage establishes the qualification necessary to be eligible to apply for PR. That's one piece. Then you have to establish that yours is a genuine relationship, and not just one entered into to facilitate the entry of the foreign national to Canada. For that you need to document the development of the relationship, with proofs; and submit evidences of it's "continuing" nature. That's where the photos, visits, phone calls, etc., come in.
